How to make Healthy and Energy Boosting Lactation Cookies

Making these nutrient rich and utterly delicious energy and lactation cookies are a fab way to help mums by providing a little energy boosting snack, or as a lactation cookie to help with postnatal care.

Don’t worry even if you’re not breastfeeding these are a popular snack for the whole family or friends to enjoy!


These babies are free from gluten, dairy, eggs and soy and are vegan so can be a great option when there are intolerances in the family.


Best of all they are so easy to quickly whip up a batch when time is tight.

 


RECIPE: 

You'll need:

¼ cup ground flaxseed

½ cup water

½ cup melted coconut oil

¾ cup coconut sugar

2 cups gluten-free rolled oats 

1 cup + 1 Tbspn gluten free oat flour 

½ tspn baking soda

½ tspn cinnamon

Pinch salt

½ cup Flavour choice – choose from raisins, chocolate chips, chopped dates or figs

 Optional - 2 tspn fennel seeds for breastfeeding mums

 

How to make:

  1. Firstly preheat your oven to 175 degrees

  1. Place the flaxseed and water in a bowl for 10 mins to thicken

  2. Melt the coconut oil over a low heat on the stove

  3. Add all other ingredients to a bowl

  4. Add the flaxseed mix to the other ingredients and mix well to combine

  5. Make balls from the dough (approx. 2 Tbspn of mixture for each)

  6. Place the balls onto a lined baking sheet and press with the back of a fork to flatten slightly

  7. Bake for 10-15 mins, then remove and cool on a rack for 60 mins to firm up

 

Store fresh in an airtight container for up to 7 days in the fridge.

They also freeze well for up to 2 mths so you can make in bulk and save precious time

  • The oats and flaxseeds in this recipe have hormone balancing properties helpful for breastfeeding mums, but they also contain complex carbohydrates which helps to provide sustainable energy for both tired parents and busy kids! Win win. 


  • You can also personalise these energy and lactation cookies with lots of options to suit your needs - such as:

    • Add 2 Tspn Fennel seeds which are known to aid breastmilk production

    • Add 1-2 Tbspn Chia seeds to boost fibre and protein content

    • Add 1/2 Cup pre-soaked dates to aid sluggish bowels
